Shypoke Cellars Le Corbeau Calistoga Charbono 2018

Super-rare                                                  Shypoke is one of our favorite small producers, making hand crafted in ridiculously small quantities.  This is one of the best Charbono's we've found in California. A must try while it's still available. The heirloom Charbono variety, hailing from the Savoie and grown with pride on our Calistoga ranch since 1904. Pomegranate and dark plum cut a groove amongst tart cherries and roasted sage.  The  2018 Le Corbeau Calistoga, Napa Valley Charbono was hand picked & cold soaked while awaiting the fermentation start. After hand punch downs and achieving dryness we fill seasoned French oak barrels for native ML fermentation.  These very traditional methods we employ help capture place and time. Fresh pomegranate, red plums and cherry notes. Heirloom romanticism & south of France allure. Transcendent. Just 9 barrels were produced.
