Adaptation is the elegant left overs from 100 point power house Odette. Layered with black fruits, floral tones and spice. Today, winemaker Jeff Owens and his winemaking team continue to produce awarding-winning cabernet sauvignons from the Stags Leap District estate vineyard that encapsulate the inspiration for the property – combining power and elegance, while simultaneously showcasing the unique properties of the AVA. Pick up a couple cases and drink easy. The 2018 Adaptation Cabernet Sauvignon is opaque purple in color, presenting notes of wild blackberries, luxardo cherries, plums, crème de cassis with hints of fresh spring flowers. This full bodied expression displays beautiful ripeness with elegant, very fine, well integrated tannins and a gorgeous silky texture. Built for near term appreciation and long term potential, this forward, upfront and approachable style can be enjoyed over the next decade+.

Blend of 80% Cabernet Sauvignon, 18% Merlot and 2% Petite Sirah, deep Ruby with aromas of red fruits, herb spice and smoky oak scents. On the palate flavors of black cherry and plums with cinnamon, licorice and cacao, lively acidity. Fine ripe round tannins, well balanced, long finish ending with fruit, tobacco and earthy character.
