Caymus Vineyards produces two Cabernets Sauvignons from Napa Valley, the Napa and the venerable “Special Selection”. Now they have added the first new Cab in eons under the California appellation. This classic, sumptuous, extravagant Caymus Cabernet from vineyards throughout California delivers in spades. Caymus owner and winemaker Chuck Wagner seeks out special pockets of land that have often been overlooked but hold the potential to make great Cab, based on the belief that when you find similar soils and climate, you can produce similar wine. Generally speaking, stony soils, south facing slopes and moderately warm conditions are the key elements that make dark, rich and good-tasting Cabernet. Chuck envisions a "lifting up" of both growers and communities in California that have not been in the spotlight. While Caymus began in Napa Valley, and that will always be its home, there is much to be excited about in a broader stretch of the golden state. This new wine delivers everything you’d expect… intense and supple fruit, with a super-silky texture and unabashed richness that made Caymus the legend of Napa Valley. Dark Ruby, aromas of ripe black fruits, smoky tobacco and pepper spices. On the palate flavors of black cherry and blackberry with herb, cacao, espresso and vanilla oak, after it opened up. Fine tannins, medium+ finish ending with fruit, cacao, vanilla and earthy herbs. Drinkable now! Seems a bit pricey!

I realize this is a Caymus, but not really Caymus. However, for $50-$60 bucks, I felt like I had Caymus. Big, juicy cab. Plum, raspberry, cherries. We enjoyed it with friends and a fireplace roaring in the background. Would’ve gone very well with a steak. Wish I could’ve aged it another 2-3 years.
