The palate unleashes beautiful wild strawberry fruit flavors, super fresh, fleshy and pure. Great balance and depth." 93 points Wine Spectator: "The Billecart-Salmon is a lovely rosé in an almost vinous style, with mouthwatering acidity and a fine, lacy mousse carrying appealing flavors of ripe raspberry, white cherry fruit, star anise, mandarin orange peel and honeysuckle. Lightly chalky on the lasting finish. Enjoy with food. Drink now through 2020." Billecart-Salmon was one of the very first Houses in 1954 to believe in a Rosé style in Champagne. Made with between 30-40% reserve wines.  The dosage is 7-8 grams. This cuvée unveils a subtle aroma leading to an elegant, delicate bouquet of fine notes of red fruits and citrus fruit zest. Champagne has gotten expensive lately. This is no different. But, it is my go to N/V Rosé. Seems I’m still willing to pay the large increase for it. Tis the season for garden tomatoes. So great with Burrata topped with olive oil & Tondo balsamic, (find it, the best), basil, served on olive oil brushed, broiled crostini’s made from Simple Sourdough made by Companion Bakery. From 375ml.

Brilliant pink salmon color, fine bubbles, firm mousse, elegant aromas of fresh red fruits, with gentle citrus scents. Brut Rosé, a Romantic champagne, blend of Chardonnay, Pinot Meunier and Pinot Noir vinified as red wine. On the palate graceful fruit flavors of fresh raspberries and ripe cherries integrated with slight spice and hints of chalky mineral, vivid acidity on the well balanced long finish ending with biscuit notes. Nice!

It’s 1/2 bottle n/v Billecart evening. This is a more appropriate color of rose for the Rosé color of this champagne. My go to n/v Rosé Champange for a number of reasons…quality & 1/2 bottle availability are right up there. Blood orange, black cherries, Rainer cherries, lean strawberries, pomegranate juice, hints of raw rhubarb, grainy, grippy, sharp chalkiness, crunchy volcanics, limestone, sea fossils, baguette crust, deep white spice, orange lilies, peach roses, excellent, lively acidity with a rich, well balanced smart finish that starts clean, ripe fruits falling onto perfect minerality.
