Aromas of black cherry, hickory smoke and vanilla cookie lead into a palate of brown sugar, sea salt, caramel and black-cherry foam, all framed by polished tannins and just enough acidity." Austin Hope Cabernet Sauvignon stems from an endless fascination with the soils and diverse sub-regions of Paso Robles, where exceptional wines are being made. It also tells the story of the Hope family’s long history in the region and how their pride and knowledge can be brought to life in a bottle of wine. Deep ruby in color, the Austin Hope Cabernet Sauvignon expresses intense fragrances of black currants, ripe black cherries and blackberries with subtle notes of violets, mocha and dried spices. It’s a big, powerful, modern-styled wine with velvety tannins and heaps of juicy blackberry and cherry fruit, while nuances of cedar, clove and vanilla bean round out the long, smooth finish. It’s full bodied, rich and balanced by fresh acidity with a firm, polished tannin structure.

Grapes from small Paso Robles AVAs blocks, aged in 75% new oak for 18 mos. Dark Ruby, aromas of sweet ripe black fruits, smoky tobacco and pepper spices. On the palate flavors of black cherry and blackberry with herb, cacao, espresso and vanilla oak, after it opened up. Fine tannins, long finish ending with fruit, cacao, vanilla and earthy herbs. Good but let this age for a couple of years.

Austin Hope! 2021 Paso Robles Cabernet Sauvignon!!!!!!!!! Delicious! This amazing wine has a beautiful bouquet that reminds me of a field of fresh lavender and lemongrass! The pallet gives us an amazing black currant, blueberry, coffee bean, as well as some chocolate and Oaky earth-tones. It has a very moderately dry finish. Deep dark and concentrated color. Perfect balance of rich fruit and oak on the nose. High tannin. Leather, cacao. Medium length and very oaky finish. This is a very robust wine. Enjoying with a buttery ribeye.
