Austin Hope Cabernet Sauvignon stems from an endless fascination with the soils and diverse sub-regions of Paso Robles, where exceptional wines are being made. It also tells the story of the Hope family’s long history in the region and how their pride and knowledge can be brought to life in a bottle of wine. Deep ruby in color, the Austin Hope Cabernet Sauvignon expresses intense fragrances of black currants, ripe black cherries and blackberries with subtle notes of violets, mocha and dried spices. It’s a big, powerful, modern-styled wine with velvety tannins and heaps of juicy blackberry and cherry fruit, while nuances of cedar, clove and vanilla bean round out the long, smooth finish. It’s full bodied, rich and balanced by fresh acidity with a firm, polished tannin structure.

Grapes from small Paso Robles AVAs blocks, aged in 75% new oak for 18 mos. Dark Ruby, aromas of sweet ripe black fruits, smoky tobacco and pepper spices. On the palate flavors of black cherry and blackberry with herb, cacao, espresso and vanilla oak, after it opened up. Fine tannins, long finish ending with fruit, cacao, vanilla and earthy herbs. Good but let this age for a couple of years.

Aromas and flavors are highly expressive with notes of Luxardo black cherry, dried blackcurrant, ripe blackberry, juicy plum, violet, molasses, mocha, coconut, vanilla, clove, nutmeg, cardamom, dill, and leather. On the palate, this wine is dry with a hint of residual sugar that has a softening effect. It has medium(+) acidity, a full body, high alcohol (15% ABV!), high tannins that are smooth and velveteen. The finish lingers. It’s a rounded, full-bodied, and opulent expression that epitomizes the wines of Paso Robles.
