GUARANTEED BEST PROVENANCE: IMPORTED BY AIR FROM ITALY AND STOCKED IN CALIFORNIA Micro-production reserve Amarone (250 cases!) from eccentric producer Zýmē, this biggy is full of dried plums, morellino cherries, black pepper, wild fennel, and cocoa on the palate. You can lay this gorgeous baby down for a long, long time. Winemaker Celestino Gaspari has aged this for 9 years in Slovenian Oak before releasing it, far longer than nearly all other Amarone producers (except Quintarelli). I'd probably wait until it's 15 years old before popping the cork, but you could open it now.
